I just marathoned season one today - and I definitely see the examples that you are talking about. There is a really pleasantly slow build for them in season one, from Gwen calling him a bully when she's talking to Merlin in the pilot, to the point where her speech to him on his "deathbed" feels sweet and earned over the course of the season.

Like many aspects of the series, season one is the superior season when it comes to everyone's relationships. It's one of those rare shows that pretty much nailed season one, and then went "nah. that's not what we're doing anymore" and proceeded to fuck shit up.
