I think Snape hated Hermione because she just couldn't keep her mouth closed. I seem to remember him taking points because she interrupted him "for the second time" or something like that. Of course, back when Hermione started at Hogwarts, no one liked her because she was such a Know-It-All. Then she made friends with Harry and it was pretty much game over at that point. Third strike and all that.
