Not everyone is overlooking it. I've seen several people mention it (mostly to give legitimacy to Thorin/Bilbo since Kili/Tauriel was a romance so then they should be able to be read as a romance too).

But, the romance was the thing that was front and center. It was the most obvious thing, especially in the third movie. And it sucked! It was so bad. I was willing to work with it after DoS -- willing to see where they went with it -- but it was so very badly handled. Tauriel's character was really done a disservice in the last movie. Also, she was given crappy dialogue, which didn't help.

For me, Tauriel paralleling Bilbo's arc is just another unneeded thing PJ added. You already have the arc with Bilbo so you don't need it done a second time. I don't understand why he can't let Bilbo's actions stand on his own.

Her opposition to Thranduil is interesting but that storyline was also badly handled with Thranduil's wife and their supposed connection. It felt forced and underdeveloped. Tauriel was made to look selfish for standing up to Thranduil because it was clearly about Kili and not about some larger purpose (as I saw it anyway).

So, her arc is largely defined by Kili in the third movie. It's clearly going for romance. Many people didn't think it was done well or was needed. It hurt her character where she could've been interesting otherwise. So, that's why people keep bringing up the romance.
