It stands for "Evolving Item". They're items that get new poses every week (or more, but I'm not sure how many of those there are any more) for X number of weeks until they're done. It used to be that the new poses would replace the old ones until the end when you got all of them, but now I think they're all ones where the new poses are just added on.

The poses usually help to tell a story. Sometimes they can be really elaborate and even go along with other EIs, and sometimes there's pretty much no story at all.
