For Hotch the job isn't a habit, but more like an addiction.

He was offered a different position, leading a white collar crime task force, which would have given him regular hours and less danger. While pondering it he chose to go join the BAU out in the field. Haley wasn't happy. She was all but screaming "if you walk out that door, we won't be here when you come back", but he left anyway.

Maybe as he got older things might have changed. He might have accepted an offer to move into another, more stable, unit. But at that moment in his life he was addicted to the thrill of the chase, the hunt for the sickest criminals out there. A desk job would not have suited him there and then. And Haley couldn't wait for that vague far-off time when he'd be happy with a 9-5 position.

That's just my view on things though.
