I think she picked pink for Umbridge's color because it's the 'sweetest' of colors. I mean, unless you're also accusing JKR of having a dislike of people who love kittens. Umbridge was all about the contrast between sweet and monstrous.

I didn't notice a pattern with pink in general, though, so I can't speak to that.

Well, actually, you could argue that JKR does not think too highly of cats!

Crookshanks is hella cool, but he was half Kneazle (sp?).

McGonagall's animagus form is also hella cool, but that is an extension of the person being cool, and we cannot count that as a real cat.

The Potters also had a cat when they had Harry, but then the cat was never seen again after they died.

At the train station, cats kept walking between people's legs - a potential tripping hazard!

The facts add up!

Only cool cats: Gone and/or not real cats.

Only real cats: tripping hazards.

Other cats: the depictions in Umbridge's paraphernalia, i.e. a sign of her duplicity.

I rest my case.

How can you forget Miss Norris, the most evil of the cats!?

I forgot

That is no cat, anon. That is no cat. There is a reason the Basilisk went after her first.

If McGonagall's form is an extension of the person being cool why would that not count in favour of cats? JKR didn't have to make her form a cat, there's no plot purpose for it that couldn't be filled by any other animal.

Also not sure why Crookshanks being half-Kneazle doesn't count either, Kneazles are basically magical cats? (Something else which didn't have to exist, especially when we don't actually see any real Kneazles in the series.)

A cat was the only form that could balance out McGonagall's inherent awesomeness.

Don't ever say that to a Kneazle's face!

haha in an interview JK Rowling said that the person who inspired Umbridge was an overly saccharine woman had a kitty calendar
