Unfinished Tales: Tuor growing up with Annael
Silmarillion: Hmm, this one's hard. I'm going to go with Haleth's story, though I love Tuor and Beren's stories too, and most anything with the Sindar.

LOTR: Council of Elrond, Gandalf vs. the balrog, Boromir, Glorfindel vs. the Nazgul, Eowyn vs. the Witch-King
Hobbit: I also love the Thranduil stuff, and then the scenes with Bilbo and Smaug
Silmarillion: Beren and Luthien, Fingolfin challenging Morgoth, Turin, the fall of Gondolin, and Earendil and the War of Wrath

However, in Unfinished Tales, I like some of Turin's tale with regards to the expansion of Beleg, Gwindor, and Brandir's characters, (though I don't think we look for the same things in the characters we like).
Eowyn vs the Witch-King is indeed awesome. I will say that the first time I read LOTR, Boromir's 'betrayal' came out of nowhere to me and I didn't like him. But, rereading it, I really appreciated his efforts to make up for his mistake and I came to appreciate his character much more.

I pity Maglor and Maedhros and the others (except Celegorm and Curufin), but the Feanorians don't really have too much of my sympathy. I'll admit I'm a Sindar-girl at heart, though I love Fingolfin and his line.
I like the truly good people (Elrond, Tuor, Cirdan, Finrod). I like more hopeful stories. So, Tuor surviving to raise his son, and Barahir rescuing Finrod, and Haleth founding her kingdom, and Luthien just being amazing are the things I love about the Silm. Basically, all the high points of Elvish history ;)
