I've already written one essay for that community, and am working on another right now, so I can speak from experience when I tell you not to worry about it. You should relax, try to have fun and ask the mod for more time if necessary; she's a nice person :)
The way I organise things for my manifestos is like this:

Section 1: Introduction. Give a brief explanation of the setting your fandom takes place in - summarise the story so that old fans can have their memories jogged, and people unfamiliar with the fandom won't feel totally lost. Go into as much or as little detail as you think is needed.

Section 2: Character One. Profile the first character in your pairing. What sort of personality do they have? What's their background? What are their likes and dislikes, their special skills and goals in life, their most important ideals?

Section 3: Character Two. Same thing, different person.

Section 4: Canon. Catalogue the most significant and interesting events between your pairing. Again, go into as much or as little detail as you like, and you can provide quotes, images/screencaps or links to YouTube clips for key moments (depending on what sort of media your fandom is based on).

Section 5: Fanon. Taking into account everything you've said so far, explain to the readers why you, personally, think your pairing works so well. How do they complement each other? Are there any obstacles to their love, and how might those be overcome? What do you think the future holds for them, bliss or tragedy? Speak from the heart, and remember everything that drew you to this pairing in the first place!

Section 6: Recs. You may or may not be able to include this, depending on how large your fandom is. Pick out the very best fic and art for your pairing; don't just list anything that features them, regardless of quality.

You may or may not want to follow a similar template, but I hope I've been helpful to you somehow!
