I'm a POC, and a lot of my white friends understand getting upset at really extreme forms of racial prejudice, but apparently I'm supposed to be cool with casual racism because it's not as bad. The prevailing attitude seems to be that well, I'm not getting shot by cops while walking around unarmed, so what's the big deal?

It's okay to care. I don't think it matters much about what. And hey, since you deleted that save, the time he died is gone. You can meet him again, help him again, wipe out the Brotherhood and maybe that bear cave above the bridge to be sure. Personally, I shove a bunch of venison and leeks in his cooking pot and stuff his sacks with gold and soup.
