1 1/4 cups all purpose flour
2 tsp baking powder
1/2 tsp salt (I didn't use the salt)
1 tsp cinnamon
1/2 tsp ground nutmeg
1/2 cup raisins
1 1/2 cups carrots, grated
1/4 cup orange rum (I used Captain Morgan spiced rum)
1 tablespoon orange juice
2 large eggs
1 cup granulated sugar
1/2 cup vegetable oil
1/3 cup walnuts chopped

Preheat oven to 350. Line cupcake tin. It made between 12-16 depending on amount put in.

Sift flour, baking powder, salt, cinnamon and nutmeg in medium bowl.

In medium saucepan, mix raisins, carrots, rum, and orange juice over low heat. Stir as it simmers for 5 minutes. Remove from heat.

Use an electric mixer in a large bowl to beat the sugar and eggs. Add vegetable oil and continue beating. Add raisin mixture and walnuts while beating. Turn mixer to low and add dry ingredients.

Bake for 18-22 minutes until a toothpick inserted in comes out clean. Let cool.

Frosting:
1-8oz package cream cheese at room temperature.
7 tablespoons unsalted butter at room temperature (I used salted because that's what I have in the house)
2 cups confectioner's sugar
2 tablespoons rum
1/4 chopped walnuts for garnish

Beat cream cheese and butter until light and fluffy about five minutes. Slowly add sugar and rum. Beat until smooth and fluffy. Dollop icing onto cooled cupcakes and garnish with the chopped walnuts.

It does look very yummy!! Thank you for sharing. I don't think I can try the recipe as soon as tomorrow, but I definitely should in the next few days.
