Is there any way you can go with a friend who's already into sushi? That's the best way to do it, IMO. If not, then personally I find it reassuring if I do research into what to expect before I try something new, it helps keep my anxiety levels down.

Bear in mind that this is flexible and a lot depends on your individual sushi bar. Most of them, for example, will absolutely not care or even notice if you add wasabi to your soy sauce dish. Sushi bars usually have a set sushi combo that you might start off with if you're not familiar with sushi in general. Rolls are usually quite beginner friendly and are easier to eat if your chopstick skills are rusty. If it's not too busy, try sitting at the sushi bar and letting the chef know that you're new to sushi and ask for recommendations.

Good beginner rolls:

* tuna
* spicy tuna if you like spicy foods
* California rolls (I know, not authentic but tasty and very accessible)
* salmon
* eel and cucumber

Good beginner nigiri:

* salmon (ideally should be very nice and buttery tasting, the safest raw fish bet)
* tamago, a sweet egg omelette
* shrimp, cooked
* crab stick, fake crab, the same stuff in the California roll
* unagi (freshwater eel, it's cooked and served with a very tasty teriyaki-like sauce)
* tuna (ideally should be very clean-tasting and not strongly fishy)

Remember that it's okay. Sushi bars see newbies come in all the time and they're not here to ridicule you. They want you to have a good experience and will usually try to take care of you a little more if you need it. Don't be afraid to ask for explanations or clarifications if you're not sure of something. Every single sushi bar I've ever been to admires people who are brave enough to try new things. Thank you for the advice. I like tuna and spicy foods so most of your suggestions look great.

Does eel have a funny texture?

The texture of cooked eel is similar to fish. Not one of the firmer fleshed fish like salmon, but more like catfish.

Eel is quite firm but very fatty. There are often small bones that are usually not entirely removed, but like the salmon in a tin of salmon are cooked to the point of disintegrating when you bite into them.

The combined result is a very firm, meaty bite that actually is less like "fish" than it is a thin slice of pressed ham (like spam) with a dense texture that melts in your mouth. The sauce it's served with dominates the flavour entirely so there is no fishy taste whatsoever.
