When I was 16, my girlfriend and I were on the set of Star Trek: The Next Generation while they were shooting an episode. Between scenes, we worked up the nerve to approach Patrick Stewart while he was sitting down by himself.

He was amazingly gracious, signed a couple things, and chatted with us for the entire break, until he had to go back to work. He had every right to say "I don't want to deal with fans while I'm on set" but he didn't. He just talked with us two awkward, dorky teenagers, listening to our fervid praise of his work, telling us stories about movies and plays he'd done... seriously, what a guy.

I got to meet him and I gave him a rose (this was not on set, it was at one of the cons) he was really classy and he has this great British silly sense of humor, which you wouldn't necessarily be aware of if you just knew him as Picard.
