Some Jews still flip out at you if you use the word "genocide" to describe killing anyone other than Jews. They insist it's their word, and can never apply to anyone else. (I wish I was kidding.)

There are even smaller versions of this where I've seen Jewish people try to appropriate certain things as "uniquely Jewish" experiences, that aren't legitimately part of the faith.

Um, can you give any sources for this? AFAIK, the objection is to the term "Holocaust" to refer to anything but genocide committed by the Nazis.

On the other hand, sites like the US Holocaust Museum seem to have fairly extensive references to modern instances of genocide like those committed against the Rohingya of Myanmar, Bosnian Muslims, and Tutsi in Rwanda. Plus, there's a lot of material there about the persecution and murder of Roma by the Nazis.

Agreed with this--I wrote my undergrad thesis on historiography of the the Holocaust and I have never once seen a Jewish objection to the term "genocide." Holocaust, yes, debates over Holocaust vs. Shoah, yes, but not genocide.
