Eh, I've shipped canon and non-canon pairs. Both strategies have their pros and cons. Although it should be pointed out that canon pairings that have the most fannish activity often involve fanworks that actively aim to change or expand on canon because fans don't "approve" of how the authors are writing the story, not because they're simple followers who aren't creative or iconoclastic enough to come up with their own non-canon ships. Just as with most types of fandom activity, shipping a canon pair is about going beyond the canon and making something your "own".
