When I do ship canon pairings, it's because I like both characters and think they work well together.

That's the same reason that I ship non-canon stuff.

Also, in some canons, there actually aren't that many non-canon options that would work out in a way that would appeal to me. In that case, "all the possibilities" doesn't really apply.
