1 package of extra firm tofu, crumbled into small pieces
1 generous teaspoon vegemite (trust me)
2 tablespoons light Chinese-style soy sauce or tamari
liberal amounts of ground black pepper
cumin, garlic powder, or chili powder - depending on intended use
Mix together vegemite, soy sauce, black pepper and seasoning to a uniform consistency. Add crumbled tofu and let marinate for 5-10 minutes. Spread on a baking sheet and place under broiler on high. Let tofu brown, flipping every 1-3 minutes until tofu crumbles are an enticing beef-brown color and have a chewy texture.
Be careful not to let the tofu burn- at the end it only needs around 30 seconds between flips.
Once cooked, this tofu will hold its texture in chili, spaghetti sauce, tacos, on pizza... whatever you like. If using it in a recipe be sure to use salt sparingly until the tofu crumbles are added, because they do come out fairly salty due to the vegemite and the soy sauce.
One package feeds around 2 very hungry people if you are making tacos- which I highly recommend you try.

It's the combination of vegemite and soy sauce that really brings about a beefy flavour. Adding those two to a bit of water with some garlic and onion gives you a beef broth substitute that is pretty much indistinguishable from Bovril or Lipton or other concentrates. Really good for making "beef" gravies, as well.
