May I suggest quinoa, seitan, chia seeds?

You probably already know about quinoa. It's very good for you!

Chia seeds take some getting used to in terms of texture but for beginners they can be used to make a delicious chocolate pudding, plus 100g of chia seeds have 16.5g of protein.

Seitan (wheat gluten) may not be the most nutritious of all vegetable proteins, but it's definitely worth looking into for its ability to mimic luncheon meats and palatability.
