I keep hearing people say she's great, but the one book of hers I tried reading was all about some woman trying to get pregnant and was the biggest snooze I've ever read. Couldn't get more than halfway in. Did I just read the wrong book or something?

Depends on how much you like high fantasy. Her two completed trilogies (in the same universe) are sort of GoT-like in the sense that they're about kingdoms, politics and succession, but not nearly as complicated or rapey as George RR Martin.
