e: looking it up on Wikipedia, apparently Shigeru Miyamoto thought that 'donkey' meant 'stupid' and he wanted Donkey Kong to be a stupid ape

That's actually not that far a stretch. Poor guy probably got 'ass' or 'asinine' and 'donkey' confused. I can see how he got there.
