Oddly, my experience was the opposite. I started watching from episode 1 and managed to get through about 5 or so episodes before I decided I wasn't interested enough to carry on. Then, shortly after I had stopped watching, I caught a random episode about halfway through season 1 on TV and actually really enjoyed it, so I decided to go back and catch up with that in mind and I've stuck with the show ever since.

I wonder if it depends on the characters you do or don't 'bond' with in the first handful of eps you see.

I know the ep we saw initially was the one where Ward and Fitz go on a mission together, and we just... felt like they had no chemistry in terms of teamwork or friendship or anything. ~ Then when we watched the initial eps we all loved Coulson and Melinda to bits, (and yes, FitzSimmons) and since we pretty much watched it for those two, with whoever else was along, we just kept going through the sloggy/less interesting bits in the first half of S1. (Unfortunately we didn't get a chance to see the first half of S2 due to a DVR mishap; we hope to catch it in reruns at some point.)
