As someone who is asexual, I headcanon very few characters as asexual, and usually it's because I see them as the type of person who would get no enjoyment out of an intimate relationship and has a very low interest in relationships in general. Most of my /favorite/ characters, if they're not a confirmed sexuality in canon, I generally headcanon as straight (a handful of them gay).

I'm asexual as well, and only have a couple characters headcanoned as asexual that I can think of. One who's never been in a relationship in canon and just doesn't seem interested in sex (while the other characters make it clear that they definitely are) and one who's only had one past love interest/relationship in canon over multiple seasons (while everyone else has had several) and seemed apathetic at best about it, and has actively said that at this point they don't want a relationship (though I guess this one could maybe be more aromantic than asexual, I suppose).

Usually if there are no hints about a character's sexuality, I tend to think they're straight just because it's most likely statistically. Sometimes it's not confirmed and I'll think gay or bi but ones where it's ambiguous for some period of time almost always end up straight in the end.

Another asexual here, and I think there are only a couple of characters I think might be asexual either: original flavour Sherlock Holmes (could be gay, but I lean asexual), possibly bookverse Bilbo Baggins (not Frodo, Frodo was just traumatised, but I think Bilbo genuinely wasn't interested), bookverse Jean Valjean and possibly Javert (though I lean more towards 'extraordinarily repressed gay' for him). In most cases, yeah, it's because they haven't really had a (sexual) relationship in canon, and seem largely disinterested in the whole concept.
