Well, they started shipping them when Thor came out. At that point the only interaction Coulson had had was with Tony. And solo Iron Man films don't seem to have much fic focused on them.

I expect they are shipped so hard because of fanon. They are just one of those Fandom things that got super big and now people think of them as just that thing everyone does. Like Thor eating poptarts or Clint running around in air vents.
