WTF, there is no expectation of privacy in the office. None. Not in your browser, not in your cubicle, not in your break room. Your expectation of privacy ends at your front door.

You're basically correct. Workplaces are legally allowed to monitor whatever they want so long as you're using their facilities and equipment minus certain areas like the bathroom where other privacy laws apply

Recording conversations is hardly any different from tracking literally everything you do on your work computer, using your work internet, sitting in your work chair at your work desk which all belong to the company
