The climax of Aliens. It's magnificently tense up until they get back to the ship, and then it's a fantastic fight with an amazing one-liner.

Most of the bullet-time moments in The Matrix, especially the "dodging bullets" scene.

And I don't know if it counts as an action scene, but the T-Rex escape from Jurassic Park. If nothing else, those roars are amazing.

Escapes count! I don't think anyone else mentioned Aliens, and now that I think about it Jurassic Park probably should've been on the list more. Those are both classics.
