Recipe suggestions?

[personal profile] sarillia 2015-07-17 12:08 am (UTC)(link)
I have a little group of friends I get together with every week and I always bake something. I have some heavy cream left over from making chocolate ganache last time and I'd like to use it up next time. I don't know what I want to make though. Any suggestions for recipes that include cream? I'd kind of like something with fruit but that's not set in stone.

Have you ever made whipped cream? What about doing a trifle with homemade whipped cream, fresh fruit, and angel food cake?

I'm not sure the exact recipe, as it is a dish that one of my parents' friends always brings to our house, but it's whipped cream, cut up strawberries, blueberries, raspberries, blackberries, and chunks of angel fruit cake all served in a big glass bowl. It's super light and my favorite dish.

That is a definite possibility.

How much cream? Because if it's just a bit then make a pavlova topped with fruit and whipped cream. You will not regret it.

I think I have a cup and a half. I have been looking at pavlova recipes. I've never had it before but it sounds great.

They're actually pretty hard to fuck up, too. I am not great at other meringue-based applications but the one time I made it it came out magnificent: crunchy on the outside and marshmallowy on the inside. Amazing with fresh fruit and whipped cream, and you don't need to go too heavy on the whip either so a cup and a half would probably be ideal.

Fool

Make a fool: they're just fruit puree and sweetened whipped cream.

Here's a recipe for a mango fool.

Ice box cake.

Make whipped cream, then take some crisp cookie (graham crackers, Nilla Wafers, Oreos, chocolate wafer cookies, gingersnaps, etc.), layer cookies-whipped cream-cookies until desired height, then cover sides and top completely with whipped cream, put in the refrigerator overnight (the moisture in the cream will make the cookies puffy and cake-y). You can add fruit over the top of it when you serve or fold it into the whipped cream before assembly.

Or you can make ice cream. 1 pint heavy cream, 1 14oz can of sweetened condensed milk. Beat cream until you get slightly firm peaks, add condensed milk and beat until you get stiff peaks, add in any desired flavoring (vanilla extract, mint extract, almond extract, etc.), and fold in anything you want (fruit, nuts, candy, crushed Oreos, chocolate chips, etc.). Freeze overnight.

There's also an extra rich pound cake: http://www.two-tarts.com/2011/09/extra-rich-pound-cake.html

Seconded the suggestion for pavlova. It's not as hard as it looks and the combination of crisp/pillowy meringue, cream and fruit is absolutely divine! Any of these recipes will probably work:

If not, then maybe a batch of scones?

Cream scones! They're absolutely divine. I like to put currants in mine, and then have them with a good rich black tea.

I recently made this peach crisp with maple cream sauce, and it was amazing.
