If I adore the pairing and the writing is good then I'll probably try it, but I tend to read soulmate AU's (And other AU's like coffee shop, teacher, etc) as a last resort. (Aka, when I've went through literally everything else and am desperate.)
Right now I'm seeing lots of marked ones (where either the name of your soulmate appears on your body, or a phrase that person says does) and I'm kind of bored of it. Wish someone would do something unusual with it.
