Depends on how it's done, or what kind of plot they're focusing on. I mean, I've written a few, though most of my AUs go the other way, turning earth normal settings into fantasy/SF settings. I've also done a couple where I've converted non-human characters to different kinds of non-human characters (fantasy to SF, or urban fantasy to high fantasy, and one fantasy to superhero). The ones where I made non-human characters human were usually noir/prohibition/crime AUs, where things are complicated enough without trying to explain aliens, though you can keep some elements of their backstories (making them foreigners to the setting location, for example, or finding an earth analogue for bits of the alien history), or have slight references to their canon abilities (having a guy being slightly stronger than he looks and having people comment on it, say, without actually making him so far off the mark as to seem non-human).

I don't know. It depends on how it's done. It isn't my usual cup of tea, though, yes, unless the new plot/setting is one that interests me enough on its own merits. I like historical/crime AUs of fantasy/SF canons, but something like highschool or coffee shop AUs aren't enough to cover the loss of non-human characters for me.
