I've seen both endings but it has been a while, so remind me of how the happy ending made Seymour a psychopath?

I'm pretty sure they mean the fact that he got a normal, happy life after feeding people to the plant, with no negative consequences.

Is this the original ending from the movie? If so, Seymour feeds Audrey specifically at her request--she sings "ah, don't you see?/I'll finally be/Somewhere that's green." I loved that ending because I thought it was much truer to her character--someone who deep down never thought she deserved anything good.

That's the original, stage-based, megadowner ending, not the theatrical, happy ending. Seymour and Audrey survive that one, and live happily ever after (...maybe), with no legal consequences for having killed Dr Orin Scrivello, DDS (who, to be fair, deserved it), and Mr Mushnik (who didn't).

As an adult I prefer the original ending for the musical but I know that when I first watched that film when I was little I would've cried for days at the negative ending. Doesn't help that there was a cartoon around at the same time where Audrey II was good, more like a pet plant that ate steak than an evil man eater.

In David Geffen's bio the point is made that a movie is a different beast from a stage play: the play ends with a curtain call underlining the idea nobody is really dead, but the movie just ends with everyone dead. I'm not sure everyone would buy that, but I found that an interesting distinction.

The stage-based ending didn't go over well with test audiences, so the movie as released in theaters (and on TV, and on video prior to this decade) had a new ending where Seymour saves Audrey and kills Audrey II, then he and Audrey go on to live in the little tract house she dreamed of. (Except there's a little Audrey II in a pot outside the house to add a little bit of 'DUN DUN DUUUUUUN!' to it.)
