Seconding Gankutsuou. It's a very different spin on The Count of Monte Cristo, but that allows it to go in its own direction and present some new ideas.

I also tried Le Chevalier d'Eon, but the first episode didn't really sell it to me. Maybe it gets better later.

For FMA, I'd say it's best to just read the manga. The first anime goes off in its own weird direction and forgets all the self-consistency and intricate worldbuilding that made the manga great, and Brotherhood is so close to the manga that it feels kind of pointless.

Ah, I'll have to fight you on this one! I loved both FMAs for different reasons, but I think both of them dropped the ball big time on the ending.
I absolutely detest the ending of the manga, and I think that it kind of derailed at the end as well, just in a different way.

FMA03 and FMAB are both worth watching, imo.

That was pretty much my take on both FMAs too. I loved them both up until the endings and then they just sort of... fell apart. But even so, the rest of the series was good enough that I'd still recommend them anyway.

A third enthusiastic rec for Gankutsuou, and seconding Mononoke (especially the original 3 episode arc from Ayakashi)

Yeah, Le Chevalier takes a few episodes to really get going, but once it does, it had me hooked between the plot and the character relationships. The plot had some great intrigue going on, and I really enjoyed the dynamic between the four main characters.
