How do you refer to your SO when talking to others?

So I was having this discussion with someone earlier today, and they were saying how if you're 30+ and in a relationship but not married there's not anything acceptable that you can call the person you're with. "Significant other" sounds awkward to them, "partner" sounds too business-like and "boyfriend/girlfriend" are "immature".

I know plenty of plenty of people who say SO and partner, and I know a couple in their 40s who refer to each other as boyfriend and girlfriend and it's never sounded weird to me, but I'm curious what other people thought. In the past I've just gone with boyfriend, but I was younger, so I'm not sure what I'll call them if/when I'm dating but not married in my 30s.

What do you guys call your SO/partner/whatever? Do you think certain terms are weird, and does it depend on age?
