I sometimes find the oversharing a bit weird, but I think it's (or it started as) an attempt to make those things not shameful. Like, I get that there's a difference between things you wouldn't necessarily share because who the fuck would want to know, and things you wouldn't share because they're gross and you should be ashamed. But I think a lot of these people grew up or were taught that mental and chronic physical ailments and sexuality weren't private because no one cares that much but because they were deviant and disgusting and that they should be ashamed for their sexualities and illnesses that they had no control over. Which is fucked up. Shame should be about stuff that people have a choice to do or not, not about who they are and how they identify as people. So yeah, I find the tmi annoying sometimes, but I'm not gonna tell them to stop.

+1 And it's also about reaching out to others with similar identities (it's why I put that I'm queer in my twitter profile), and it might also be about giving people a better understanding of where you're coming from if you've got something going on with you that's a bit different from the "norm".

SA Thinking about it a bit more, if you do have a non-normative or less privileged identity, it's probably going to be a big deal in your life, and is going to feel relevant when summarising the main aspects of yourself in a profile. Why is it a big deal? Because you've most likely faced discrimination and/or misunderstanding for it.
