Fall Cooking/Baking

[personal profile] shortysc22 2015-09-23 12:18 am (UTC)(link)
Since it's that season, what are some things you traditionally make?

I just spent the last two days preparing tomatoes and making homemade tomato sauce for the winter. I'm thinking of attempting applesauce next. It's definitely apple pie season too.

Any other favorites?

Squash soup, squash lasagna, apple pie, Danish apple cake.

What squash do you use for your soup and do you have a recipe?

I like kabocha squash and I cheat--I dice the squash, bake it with a little butter, and add it to ready-made squash bisque.

For me it's apple turnovers and all things maple flavored.

This reminds me that the cafe where I like to eat Saturday breakfast once or twice a month will probably be bringing back pumpkin pancakes with maple butter and apple compote! And their utterly delicious red flannel hash with sriracha mayo.

They have fantastic seasonal menus that change every six weeks or so.

That sounds like a great place. I haven't been to a nice cafe in forever.

I dearly love this place--the chefs put a lot of emphasis on local, seasonal food, and I don't think I have ever had a disappointing meal there. The one bad thing about it is that it now has the reputation as the place in town to get breakfast, and this is a college town, so any time there is a home football game or an event like Parents' Weekend, the wait for a table can be as long as 45 minutes.

Pumpkin cookies made with canned pumpkin, cake mix, and whatever else you want to add. So easy but so good.

I sort of want to make a pot of chili (and either garlic bread or cornbread to go with it) but I'm putting it off because I'm not ready to let go of summer yet.

I also want to finally make some sort of pumpkin dessert type thing. I've been wanting to for like the past three years but for whatever reason never got around to it.

I know what you mean about mot wanting ot let go of summer. It's why I haven't tried anything but tomatoes right now because it's the last sign of summer for me.

You can tell it's fall because I start having mashed potatoes instead of french fries for dinner. It's more expensive and takes more work, but oh god I love sitting in my kitchen with the funk/soul station on just reading the paper and having a nice hot meal with potatoes.

It's funny, we switch from fries to baked potatoes in the winter.

Fall is the season of soups. Chicken noodle. Lentil. Split pea. Borscht. Beef stew.

There is nothing like homemade chicken noodle soup.

Nope, there really isn't. I love my mother's recipe. I'm a huge soup fan in general. I actually eat it all year round.

Oops, misread the title as "Fail cooking".

As for seasons, my tea is gaining more ice.

Usual: jam, pickles, freezing of summer fruits.

This year I have half a giant summer squash in the freezer, cut up nicely into sections for whenever I have need of it. I also have several mason jars worth of blackberry jam.

Plus I picked about 20lbs of hazelnuts and around the same of apples over the weekend so my next projects will be applesauce/butter and drying the nuts.
