I think that depends.

Some serial multishippers seem to ship everyone with everyone and sometimes don't even stick with parings but jump straight to OT5/6/7/8/9/10 just because.

That kind of multishippers are into it just for the hot, and chemistry, characterization or development is irrelevant when they can just write hot A/B, C/D, B/D, B/C, A/C and A/B/C/D. And then they get tired and move to another ships or fandom to do the same thing.

But some others just... don't get attached to just one ship, yet they're more selective with what they ship. Those multishippers can write good stuff too, though I think that most great fics of many ships are written by OTPers.
