Ancient wizarding history would be my first thing. Because I always find history interesting.
Wizardry in other nations and the way things are different (and maybe ways magic itself might be different) would be next.
I'd write more about Hogwarts itself, about the lives of the professors (particularly McGonagall) and then about previous professors as well.

I always wished JKR had written more of wizarding history. Where did it all begin, etc. I understand why she didn't, I just find that interesting.
