I loved Marguerite Henry! Misty of Chingoteague (and its sequel), Black Gold, and Brighty of the Grand Canyon were all books I enjoyed as a kid. Not sure how they'd translate into adult books, but I think they were considered more challenging reads when I was a kid? Like they'd be at a higher reading level than, say, the Babysitter's Club (which I also read lol). Note: Brighty is about a donkey, not a horse, but it's a pretty good story.

I also enjoyed the Black Stallion series by Walter Farley, though I don't remember much about them.
