I do like fic with ocs (outsider_PoV is one of my narrative kinks).

Character/omc or character/ofc, all is cool. I just find the sex scenes the least interesting part in most fics like that.

I've definitely seen it happen, although as soneone else said, it tends to be something in fics that are mainly about slashing two canon characters. The omc is someone from the past (returning or in flashbacks) or someone getting in the way of the main pairing or somehow involved in making a male character realize his interest in men, etc. I've seen straight up canon character/omc shipping only maybe a couple of times.

I feel you, OP, and it's frustrating that ocs are so looked down on/ so often conflated with self inserts (see above).

I like character/omc fics because they often focus more on the journey of the (canon) character, rather than focusing on just the main dudes getting together, like traditional ship fic so often does. It's not the ocs that are appealing (though they can be), it's the themes of personal and sexual identity, of exploring the character by adding an element that doesn't exist in the bounds of the pre-existing canon. That is super interesting to me.

Try the Downton Abbey fandom they have a lot of good Thomas Barrow/OMC fics.

I feel weird requesting male character/OMC fic on kink memes, but it's often what I really want the most.

So many people are completely uninterested in original characters but I love them. They're a great way for the author to really put their stamp on a fic, while still retaining some ties to the original, and often there just isn't anyone in canon that is practical to ship that character with anyway, or just as importantly, that I want to pair them up with.

OCs are also fantastic for behind-the-scenes fic, the sort that shows the workings of the canon world. If it's a strong action background, or some kind of fantasy or futuristic sci fi, using OCs with different perspectives often leads to better opportunities for expanding on that world building.
