I'm cool with the realistic graphics, but I'm not sure how I feel about this trend of making characters look like their voice actors. On the one hand, it makes sense, and I can see the appeal; on the other, it kind of takes me out of the game a bit. It feels like there isn't as strong a separation between the real world and the game world.

Agreed. I think for Until Dawn it works, but that's mostly because it's a riff on campy 80's slasher flicks so it makes sense to use actors and their likeness for that movie likeness. However, I do not want that becoming the norm in the industry. I already hear Troy Baker in every game ever, I don't want to see his face everywhere too.
