He did kind of snark around in the movies, but it's not so palpable because the entire cast spout Whedon one-liners whenever the script calls for it, which makes it seem less like a characteristic they have. I know that he's different in the Captain America movies, but then we don't see him working with Tony, who is recognized by all as the chronic mouth-runner, and Steve tends to be presented as a lot more stiff.

Maybe it's just me getting annoyed at fannish portrayals, though, since those tend to further mess with things.

I came away from the films thinking he was an uptight straight man. No offense, but he really didn't snark around much compared to the other characters. I think you had to be watching him a lot more closely (as I'm sure people who adored his character might?) to see his humorous side, but more neutral parties like myself didn't perceive it as much.
