It's probably more because the show keeps piling shit on them, so they no longer believe that it could end well. And they have so much baggage by now, I honestly wonder if Sam would manage to go back to school and be a normative human being again.
I mean I dig your ideas, and I definitely want them to have their happy ending, but I'm not sure the show can pull it off at this point...

They'd have to be de-aged or be retconed by Cas (who finally gets proper powers back.) Nice, but I'm not sure I see it happening.

Well, they're supposed to end up in Heaven eventually, but why rush? If it's like Bobby's Heaven, it looks boring. And things keep happening there.

They'd probably have to be reincarnated to really find peace.

This was actually one of the reasons I started getting out of SPN so much. I really didn't like what they did with the Heaven mythos.
It's just... that version of heaven is so boring, it lacks mystery, and it really doesn't seem like something worth looking forward to. Like you say, imagining the characters ending up there doesn't give this "ah yes, happy ending" feeling.
I wish they had gone a different direction with it, even though thematically I kind of get what they were going for.
