Well... it stops being so hot that you can't taste anything. You build up a tolerance pretty quickly.

I think there is a point where the human body physically can't handle a certain degree of hotness, no matter how much tolerance you build up.

At least, not without permanently fucking up your taste buds.

If that were true, people wouldn't be able to eat Naga jolokia or 10 million scoville extract or whatever other new "hottest" capsicum has come out, but they do. With only passing ill effect, usually.
