Gang/Espionage/Thriller - Anime/Manga

Preferably slightly more grounded, but okay with Ajin etc style sci-fi or urban fantasy elements.

I don't know if you tried it, but maybe Gangsta would fit the bill? It's kind of urban fantasy but has some grounding in "science". It's pretty fun, imo, and I'm pretty sure the main characters (for all their lack of classic bishounenity) are kind of fujoshi bait, but I really enjoy them.
It also has some very nice treatment of prostitute characters and what she deals with, and a deaf MC.

(The plot itself involves gang wars with sort-of supersoldiers who are addicted to the drug that gives them their powers thrown into the mix)

That's the vibe I'm going for, except maybe a little less shounen.

Haha, ok!
I mean now that I think about it, it fits your prompt so strongly that it makes sense you'd be familiar XD

and now I'm realizing that I don't often read this genre at all. I think it's because a lot of them are either too gory for me, or too fanservicey.

(Maybe try Angel Heart? That's espionage-y, though I only bought the first volume in Japan recently and haven't gotten to it yet, so I don't know how good it is)

Wild Adapter by Kazuya Minekura
K or K Project

Both are moody, dark gang-related titles. Wild Adapter is a manga and it has 1 OVA (I think). K is an anime with 1 1/4 seasons and a movie streaming on Hulu/Neon Alley.
