This is why I'll always wonder if I'm really bi or just... that. And then I feel awful for wondering because it buys into straightness being the default and being anything other than straight needs a "reason."

I don't know. I guess for me what made the difference was when I realized I'd actually like to have sex with women and would actually date a woman. So it wasn't just noticing an attractive person or passing arousal, it was genuine attraction. But I don't know if that would fit for everyone.

But I think the same would apply to straight people? If you noticed attractive bodies of the opposite sex or sometimes had an aroused response to a naked body but would not actually want to sleep with them or date them, then you wouldn't be straight either.
