That's probably because for most of China's history, the general population weren't rich enough to be that selective about food. If you had access to protein in the form of meat or eggs, you damn well ate it and thanked your lucky stars. If you didn't, then that meant your life wasn't so great.

Well it went beyond that. The fried tofu was like no other fried tofu I have ever had. It was crispy despite being in a hot pot chock full of sauce. The eggplant was sweet in a way I have never seen eggplant be before.

It was just really, really technically superior to most Chinese food I've had before (and I'm pretty well versed from having a lot of Chinese friends).

Well, it takes more skill to prepare good tasting Chinese food without the aid of meat. So much of the cuisine relies upon it for flavoring, even if meat doesn't make up the majority of the dish. Glad you found a good place!
