Basically everything that happens after the point where I start to lose interest in the series. I might continue watching for a while, but as far as I'm considered, it's some kind of alternate universe, not canon.

For example, everything after the third season of Buffy, everything after the fifth season of SPN (including the last minutes of the final), everything after the second season of Teen Wolf, etc. I don't think that I'm alone in this.

Sometimes I pretend that certain characters don't exist so that I can also ignore their stories. Case in point, Jasmine and Connor in Angel, holy crap.

I posted below about my headcanon for Carnivale, and this is my practice, too. Season 1 is canon, season 2 was just a first draft of something that's left up to the individual viewer to edit and reinvent to our own liking.

Same with the X-Files. Season 1-6 are canon, season 7+ are just bad dreams that we don't need to write down.

Agree on SPN. I haven't watched past season 6 and the first episode of 7, and that was awful, so SPN ends with season 5 for me.
