Doesn't have to necessarily be a canon starter, but can't be a legendary, sorry, no Mews and such!

My favorite canon starter is Mudkip, but I found a randomizer for Emerald on the VisualBoyAdvance emulator, and I chose Eevee as my starter.

I feel obligated to say Charmander, because he was always "my" starter, but Bulbasaur gets a very close second. Squirtle can go fuck himself.

I don't think any of the other starters look as cool as the original three though, and lots of them look pretty weird. Some of their first forms were kind of cute but I don't think I like any of them the entire way through evolution.

Not a canon starter unless you count Mystery Dungeon...but...
Riolu.

Mind you it's also my first choice for therapy Pokemon too. Actually why I would have it be my starter. Okay, also because it's my favorite Pokemon of all.

Bulbasaur. I've always loved grass pokemon. Especially when they have the absorb line of moves and can attack and heal at the same time.

Nah, I usually start with Squirtle or any water type, really. For 1st gen I always make sure to get a pidgeoto and Pikachu on my party. Also once I catch Growlithe and Cubone they remain with me for the rest of the trip. Any of those counts as my starters since they are my faves.

Fifth gen it's Oshawott and/or Lillipup. Usually together.

My canon starter would usually be either Squirtle or Torchic and if I could have anyone (er, two) I might consider Plusle and Minun. (Oh, or Rufflet.)

Pikachu if I'm allowed to evolve it. Otherwise Charmander. And those are actually my favorite Pokemon (Raichu and Charizard), it's incidental that they happen to actually be starters!
