* 2 eggs beaten in a bowl, a little salt and pepper
* shredded cheese and whatever other fillings you want.
Note: stuff like mushrooms or bell peppers should be sauteed BEFORE you do the omelette
When the butter is melted, gently pour the beaten egg into the pan and tilt it around so that the egg mixture covers the bottom of the pan evenly. Leave it alone for a minute to let it set. You want it so that it's still slightly wet on the top, but not runny.
When it reaches this stage, sprinkle on your cheese and whatever else you want, but only do it on one half of your omelette. With a thin spatula, gently lift up the non-filled half and quickly fold it over the filled half. Put the lid on the skillet and let it set for a couple minutes, then slide your omelette off onto a plate.
