Spanakopita and tyropita--preferably in the form of trigona, which as far as I'm concerned have the perfect ratio of shattery phyllo dough to filling

Set out some feta and kasseri, olives, and dolmathes and I'm happy. Add some taramosalata and I might fall in love with you on the spot.

Dolmathes are pretty amazing, I have to agree. The only downside to having them as a party food is they take quite a bit of prep time.
