Try looking for fic around the Knights of the Old Republic 2 party characters - Atton Rand, Mira, Bao-Dur, Disciple/Mical, and Handmaiden/Brianna. Depending on the way you play the game, all of those characters can become Jedi as adults. Potential trigger warnings around Atton's history in particular, though most of them were also affected by war so you might run into some pretty dark stuff. The Jedi who trained them is the Jedi Exile, who was given the name Meetra Surik in a spinoff novel released seven years after the game, so you'll find some things that use that name (and the appearance from The Old Republic MMO) and some that don't.

I don't have any particular recs because I'm in the middle of writing my own fic based on the game (250k words! I am so proud of myself for getting this far even though it isn't done yet!) and I don't want to accidentally steal ideas from other people. :)

The game itself is a lot of fun and extremely well-written, IMO, but it's from 2004 (and it shows in the graphics), and doesn't really go deeply into the impact of becoming a Jedi later in life. I'd absolutely recommend playing it, but not for the particular story hook you're looking for. (Also, if you do, get the Restored Content Mod - Google for TSLRCM, or get it on Steam and look for the mod in the Workshop; the release was rushed, a lot got cut, and it suffered for it, particularly the ending.)

...I have Feelings about this game, clearly. :)
