I personally say two. I think it needed two so we could be invested in Thorin and his friendship with Bilbo. But three was pushing it way too far, and it showed.

Yeah this is my mind as well. One movie would have rushed it all a bit too much I think but two would have given them enough time to do everything without the need for padding.
