I would guess it's because italics seem like an admission of non-ownership? Kind of like quotation marks. If something is italicized or in quotation marks below a picture, I assume it's a quote, part of a poem, or a song lyric.

If there's no styling whatsoever I would assume it's an original statement/dialogue of the artist's.

But maybe OP just likes italics.

I'm more picky about font choice and how it looks then anything else.

That seems oddly specific. I would be more interested in font/color choices that fit the artwork.
